Development of biosensor based on immobilized L-glutamate oxidase for determination of monosodium glutamate in food.
A monosodium glutamate (MSG) biosensor with immobilized L-glutamate oxidase (L-GLOD) has been developed and studied for analysis of MSG in sauces, soup etc. The immobilized enzymatic membrane was attached with oxygen electrode with a push cap system. The detection limit of the sensor was 1 mg/dl and the standard curve was found to be linear upto 20 mg/dl. Response time of the sensor was 2 min. ...
متن کاملMonosodium Glutamate: The Distinct Flavor
The food industry is a business of mass production and consumption. Plants and animals that are grown in bulk in farmlands nationwide are processed later at large factories. It is no surprise that some of the most popular snack foods have a lengthy list of ingredients. The various chemicals found in food serve to enhance the color, texture, flavor, and shelf life. There are hundreds of food add...
متن کاملDoes Monosodium Glutamate Induce Obesity in Female Mice?
Objective: Female metabolism is highly responding towards diet associated changes. Monosodium glutamate is a popular flavor enhancer, which is widely used to develop umami taste. Young female generation nowadays deals with more issues related to metabolism and fertility. Present study is an effort to monitor the effect of monosodium glutamate oral consumption on female mice health and obesity. ...
متن کاملCrystal structure of (S)-sec-butylammonium l-tartrate monohydrate
The title hydrated mol-ecular salt, C4H12N+·C4H5O6-·H2O, was prepared by deprotonation of enanti-opure l-tartaric acid with racemic sec-butyl-amine in water. Only one enanti-omer was observed crystallographically, resulting from the combination of (S)-sec-butyl-amine with l-tartaric acid. The sec-butyl-ammonium moiety is disordered over two conformations related by rotation around the CH-CH2 bo...
متن کاملBehavioral comparisons of the tastes of L-alanine and monosodium glutamate in rats.
Recent research has implicated T1R1/T1R3 as the primary taste receptor in mammals for detecting L-amino acids, including L-monosodium glutamate (MSG) and L-alanine. Previous behavioral studies with rodents found only minimal evidence that these two substances share perceptual qualities, but those studies did not control for the taste of sodium associated with MSG. This study used several behavi...
